Hierarchy is the obvious symbolism.. The capstone represents them, the “elite” who hold enlightened, God-like authority over the rest of the system [pyramids point to the Heavens].
The eye is used as a symbol of knowing and seeing all, which is a clear sign of power (knowledge is power).
The other thing is that it is a symbol of slavery: slaves built the pyramids and are represented as being the foundation of the hierarchical system.
